A thin, crispy-edged cookie loaded with roasted cashews. It's not soft, it's not chewy. It's lacy and crackly, with deep caramelized notes in every bite. Kind of hard to describe until you try it. It's the cookie that disappears fastest whenever we bring it to a pop-up. People go back for "just one more" more than any other flavour I make. Made fresh in small batches here in Edmonton.
